Tuesday Night Dinner – Chicken with Pancetta

Okay I bought some pancetta at the store because it was marked down from the $3.00 per 3 oz. to $.99 so I looked for something to make it with. I love the capers make a sauce tastes so this was the perfect recipe.

Chicken with Pancetta
Prep Time: 15 minutes
Total Time: 45 minutes
Difficulty: Easy
Makes: 6 servings

Ingredients
8 oz pancetta, diced
4 tbsp olive oil
4 garlic cloves, chopped
6 chicken breast
salt and ground pepper
3 tbsp all-purpose flour
1/4 cup capers, rinsed and drained
2 tbsp white wine vinegar
12 pitted and chopped Kalamata olives
1 tbsp chopped thyme
1/2 cup heavy cream

Directions:

Cook the pancetta in the oil over medium heat until browned, about 7 minutes. Add the garlic and cook 1 minute. Transfer to a plate, leaving the fat in the pan.
Dust the chicken with flour, salt and pepper. In batches, brown chicken in the pan fat about 5 minutes. Stir in the pancetta, capers, vinegar, olives, and thyme. Cover and simmer about 35 minutes, until cooked through. Transfer to a platter.
Add the cream to the pan and boil about 3 minutes, until thickened. Season. Pour over the chicken and serve hot

**You can substitute Spanish olives but reduce the amount of salt.

Boiled Potatoes

Ingredients
5 or 6 medium potatoes, peeled and bite size diced
Water

Direction: Boil in water till tender
Drain and serve hot

New Years Dinner

There are several things about New Year’s Day that I follow; the no washing (any reason not too), do not take things out of the house including garbage, make sure you pantry is full and most of all the black eyed peas. Since my husband is out of town working it will be just me and the kids and Dad this year for New Years.

Menu:

Black Eyed Peas
Potatoes
Corn Bread
And greens if I have some.

First lets start with the black eyed peas, since they are easy to cook I will not soak them over night. I got a great bunch of fresh from the store so will be making them fresh. I hope it will have a great taste, this is a new recipe for me.

Black Eyed Peas

Ingredients
1 – 16 ounce bag of dried Black Eye Peas
4 – ounces of Pork Seasoning: Hog Jowl, Fatback, Ham Hock
1 – Tablespoon of Sugar
1 – teaspoon of Black Pepper
1 – teaspoon of Salt, more or less to suit your personal taste
1/2 – medium Onion, chopped
8-10 – cups of water

Instructions
Open package of dry beans and spread out on a large plate or pan.
Sort through peas, removing any stones, sticks or hard objects. Discard any dark looking beans.
Place peas in a large pot and cover with about 2 inches of cool water. Set aside to soak.
Let soak about 6 hours or preferably overnight. See package for other options.
Next morning, pour peas into a colander and drain. Rinse under cool running water till clean.
In a large pot, place about 8 to 10 cups of water. Bring to a boil on medium-high heat.
Place a few slits in your pork seasoning of choice and add to the boiling water.
Reduce to medium-heat and let simmer for about 30 minutes.
Add the rehydrated peas to the pot of water.
Bring the peas back to a boil then reduce heat to medium-low. Simmer for 45 minutes.
Stir the peas about every 15 minutes watching that the liquid doesn’t boil away. Add more if needed.
After about 45 minutes, remove the pork seasoning and set aside to cool.
Add the sugar and then the black pepper and stir well. Taste to see if more salt is needed.
Most beans absorb a lot of salt. Add a little at a time, let cook a minute or two and taste again.
Chop up half a medium onion. Chop any meat portion of the hog jowl and add both to pot.
Let the onions cook on medium-low heat until they are translucent. Continue to stir about every 10 minutes.
Taste the peas for tenderness. When cooked to your liking,remove from heat and serve.

Notes
Actual cooking time will vary depending on your taste preference for tenderness of the peas. Don’t overcook until mushy. Peas can be cooled and refrigerated for several days. Add a little more water as needed when reheating. About 2-Tablespoons of bacon grease can be used instead of hog jowl or fatback. If you use bacon grease, you will skip the 30 minutes cook time for the pork pieces. It’s best to add the bacon grease seasoning after the peas have cooked for about 45 minutes. Continue to stir and taste until tender and seasoned to your families taste preferences.

Potatoes:
You can either have mashed, boiled or fried I will be having fried. Nothing like using that bacon and extra onion to make a great pan of potatoes.

Peel as many potatoes as you think you will need. I usually do about 6 medium
1 Onion, diced
4 strips of bacon, cooked and diced or just use bacon grease.

Directions:
I use a mandolin to cut things it give a uniformed size and just faster to be honest. Place bacon pieces and grease in pan and heat. Add onion and just cook long enough to make soft. Then add the potatoes.
Turn occasionally as they fried making some golden brown (my favs)

Cornbread:
Follow the package directions for this.

Weeknight Dinner Made Easy – Beef Brisket

Yes briskets take a long time to cook but I made this one easy. Not only that but i made it during the week and in the summer and didn’t kill my AC doing it.

My brother makes a great beef brisket but he is more dedicated to the meat than I can be. I like it easier. Now this did not taste like his (and I will have to get the recipe for his) but it did have a great taste and the family loved it. Now keep in mind that I doubled this for us, it made dinner for all of us including Dad and his lunch the next day and enough for Michael to take out of town for two (2) dinners. There was even enough left over for me to either just eat the next day or turn into BBQ.

Beef Brisket

Slow Cooker Beef Brisket

Ingredients:

1 (3 – to 4 -lb.) beef brisket, or a size that fits inside your slow cooker
Salt and Pepper
1 2-oz envelope onion soup mix
1 envelope brown gravy mix
1 1/2 cup water

Directions:

  1. Put the brisket in the slow cooker fat side up (keeps the meat moist and will let the fat juices sink into the meat to give more flavor)
  2. Season the beef brisket with salt and pepper
  3. In a small bowl, dissolve the soup mix and gravy mix in the water, then pour the mixture over the brisket
  4. Cover and cook on low for 8 to 10 hours or until brisket is done.
  5. To serve, remove brisket and place fat side up. Let rest for 10 to 15 minutes then carve it diagonally across the grain in thin slices.

Mashed Potatoes

Ingredients:

6 medium potatoes
4 tablespoons butter
1/2 cup heavy cream
1/4 half and half

Directions:

  1. Peel potatoes and cut into quarters
  2. Place potatoes in pan and fill water to cover
  3. Boil for 15 to 20 minutes or until fork tender
  4. Drain potatoes
  5. In a bowl large enough to hold the potatoes add butter and cream
  6. Mix with hand blender
  7. If potatoes are too stiff/thick add half and half a little at a time.

Salad

Ingredients:

Iceberg lettuce
red bell pepper
yellow bell pepper
orange bell pepper
cucumber

Directions:

  1. Just chop up what you think you will need or make more for lunch tomorrow.

Cherry Cobbler

Cherry Cobbler (in a slow cooker)

Ingredients:
2 21-oz can cherry pie filling
1 box yellow cake mix
4 tablespoons butter, melted
Directions:
Put the pie filling in the slow cooker and spread it out evenly.
In a medium size bowl, stir the cake mix and melted butter until a crumbly mixture forms, then sprinkle the mixture over the pie filling.
Cover and cook on low for 3 to 4 hours or on High for 1-1/2 to 2 hours.
Extras:
To make gravy from the juice. In a sauce pan, melt 2 tablespoons butter and add about 1/8 cup flour. Brown the flour making a rue (just about 5 to 6 minutes on medium high heat) stir constantly. Take several cups of the juice from the brisket and once the flour is browned (light) add about a cup of juice and whisk until smooth. If the gravy is too thick just keep add juice till it is as thin as you desire.
